Here is one of my favourite recipes for sweet potatoes:
(Serves 6)

3 Organic Sweet Potatoes
1/4 cup Earth Balance Vegan Butter (or what ever spread you prefer)
2t Maharajah Curry

Peel, dice and boil the sweet potatoes,until soft. Add butter and mash the potatoes until smooth. Add the curry and serve.

The curry is a very mild curry that has saffron in it. The curry, doesn't have a strong curry like flavour, you taste more saffron. Plus the sweetness from the potatoes compliment the sweet and spicy flavours with the curry. This goes well with Babotie, which is a South African recipe that is similar to Meatloaf. Enjoy!!

I should try incorporating sweet potatoes into my life. I always associate sweet potatoes with...unhealthy stuff that people add to it- brown sugar, more sugar, syrup, marshmallows, stick into pies so I stay away from them.

Michaela I like the idea of putting curry into itWill have to try that. Sounds so yummy!
